Avocado-Orange Salad with Orange Basil Dressing


Dressing:

2/3 cup avocado or sun-palm-coco oil

1/3 cup orange juice

2 tablespoons red wine vinegar

1 small clove garlic

1 1/2 tablespoons orange peel, grated

1 1/2 teaspoon basil

1 teaspoon honey

1/4 teaspoon salt

pepper to taste


Salad:

1 large head romaine lettuce (or preferred green lettuce), torn

2 cups red lettuce, torn

1/2 cup torn red or green cabbage leaves

1/2 of a small red onion, thinly sliced 

1/2 lb. mandarin oranges, separated, (or equal amount of navel oranges), peeled and cut into wedges

2 avocados, sliced


Directions:

1. Combine dressing ingredients in blender at least one hour before serving. Refrigerate.

2. Toss salad ingredients lightly in a medium-sized bowl.

3. Pour dressing over the salad and toss lightly.
