Champagne Grape Vinaigrette
Ingredients:
1/2 c. orange juice1/4 c. Champagne vinegar
2 shallots, minced
1 T. chopped fresh mint
1 t. pure organic maple syrup
1 T. Dijon mustard
1/2 c. grapeseed oil (organic, expeller-pressed)
Directions:
1. Combine all ingredients except the grapeseed oil in the bowl of a food processor fitted with the blade attachment.
2. Pulse to chop. With the motor running, gradually add the grapeseed oil in a steady stream to emulsify.
3. Once thickened, season with salt and pepper and refrigerate for at least 30 minutes before serving.
